This is a characteristic Umbrian product obtained from heavy Italian pork, more precisely from the cheek. Trimming by hand gives the product its characteristic triangular shape. It is seasoned for 60 days and its flavour enriched with marination in brandy and a white pepper and cinnamon coating.
