Cocoré is a roast chicken prepared by recovering techniques and knowledge of the most ancient Umbrian recipes for cooking the traditional Sunday chicken. Only a few basic ingredients: salt and a mix of twelve aromatic herbs to enhance the typical roast flavour. The secret lies in the particular preparation that makes the difference: the chicken is 100% Italian and bred without antibiotics; after deboning it is seasoned with the ancestral herbs of the Sibilla, including rosemary, garlic and fennel. Then it is steamed and at the end roasted in refractory ovens, the same used for porchetta (roasted piglet). The hand-binding makes it finally of great effect in the presentation in the deli counter.
