Typical Umbrian product, much appreciated for its savoury flavour and characteristic marbled meat, cured capocollo in straw paper is plentifully salted and peppered, hand tied and wrapped in straw paper to best conserve its flavours, aromas and consistency. The longer the curing period the more robust it is.
