Prepared according to the most ancient culinary Umbrian traditions as a rare testimony of the simple way of preparing and tasting the meat by using only the most basic ingredients which enhance the flavour obtained through a slow baking in a refractory oven. After being deboned by our skilled butchers, it is hand tied in a star-shape with strings of linen to give it a unique, unmistakable and eye-catching artisanal appearance.
